To remove Thunderbird in Ubuntu, just run:

$ sudo apt-get purge thunderbird

It said it installed OK but when I try to start it I get an error saying my profile is missing. Nothing else. What do I do now?

Thunderbird 78 can be installed as a snap. –

$ sudo snap find thunderbird
$ sudo snap install thunderbird
